I’m carnivorous. I admit it freely. But I have always been intrigued by the challenge of putting together really good meals without meat as a central ingredient. Playing with meatless recipes has been a haphazard endeavor for me; I would do it when the mood struck, but it never lasted long. Either the recipes I loved were complicated and required exotic spices that meant special trips to special stores, or they included tofu, which I prefer not to put in my mouth.
High fiber/low fat diets are really best for us. They help us maintain our weight, keep our cholesterol down, and don’t clog our arteries quite as much as that fabulous prime rib roast we had for Christmas dinner. None of the roast went to waste. It’s part of the motivation for this page now.
Inspired by my love of eating and cooking, the New Year’s Eve notion of being thin, and the Moosewood Cookbook that Adrienne loaned me, I am embarking on an “Almost Vegetarian” menu for the first two weeks of 2009. Not all meals will be gourmet, but I’ll include the entire menu and some recipes that I hope will become favorites. In some cases I have calculated nutritional info and Weight Watcher points. But beware! While these meals are mostly meatless, not all are guaranteed to be low-fat.
